American chop suey, an all-time favorite, can be made in a variety of ways, but I wanted to make the traditional version I ate often as a child. I was not raised vegan, but as a vegan today, I try to make recipes that are as close to my childhood favorites as possible. This recipe fulfills that. The recipe I borrowed is not vegan, but I made it vegan by replacing the ground beef with Beyond Beef and it is spectacular. This recipe serves as an example that you can transform just about any dish to a cruelty free, environmentally friendly, version. If you think you can't enjoy all your childhood favorites, while being kind and proactive, think again.
I made this recipe exact, it did not need any tweaks except I replaced the ground beef with:
1 pound of Beyond Beef
