One of the comfort foods I missed when I became vegan was shepherd's pie, and almost immediately I was on a mission to find the perfect one. It took a while because although the ones I tried were good, they were always lacking something, that is, until now. This recipe has everything I love about Sheperd's pie, but what really makes it stand out is the Beyond Beef I used. Other vegan meat products worked in a pinch, but nothing comes close to what the Beyond Beef does. This shepherd's pie tastes like the traditional ones I remember and is so satisfying, it's hard not to have seconds and thirds! This recipe is super easy to make and so flavorful, and it's definitely become my go-to shepherd's pie recipe. Thank you to VeggieChefLaura at All Recipes for this recipe! Enjoy!
I followed this recipe exact except I also added 1/2 cup frozen corn.
For the mayonnaise I used Sir Kensington's vegan mayo
For the Soy Milk I used Whole Foods brand 365 soy milk
Cream Cheese: Violife
Cheddar Style Cheese: Violife
Vegan Ground "Beef": Beyond Beef
