Simple, Scrambled, Just Egg

When I initially became vegan, giving up eggs was difficult. I was able to find alternative ingredients to use for baking and such, but scrambled eggs in the morning was something I missed, and just had to learn to live without. Then JUST came along and my eggless world was changed forever. I was skeptical at first to try it because I had tried the powdered egg replacers and had been unsuccessful at creating a suitable scramble replacement that I liked regardless of how many spices I added. But JUST is different, way different. I don't know how they did it, but this liquid vegan egg cooks, tastes, and behaves exactly like eggs. For now, they are not suitable to bake with (they are working on it!), but if you want a good old-fashioned scramble, you will not be disappointed. I have not tried an omelette yet, but that will come in a separate post. This short, simple recipe is all you need to get you started, but you can add whatever else you like to this dish; veggies, salsa, cheese, you name it. The one key ingredient I do add, that I would strongly recommend is black salt. It's sulfurous flavor adds depth to that egg-y taste we are accustomed to. I simply cannot rave about this product enough and hope you will enjoy it as well! Bon Appetit!


I eat small portions and only use 1/3 of a bottle at a time, but add as much to the pan as you need to satisfy your portions and servings.


Serves: 1


Ingredients:


Vegan Butter (I use Miyoko's), enough to coat the bottom of your pan


1/3 bottle of Just Egg (This is what I use for a single serving but adjust as needed for your cooking)


1 Pinch of Black Salt


1 Pinch of Dill


Pepper to taste


Directions:


Melt the butter in the pan.


Add Just Egg, and ingredients to a bowl and stir until mixed.


Pour the mixture into a suitable sized pan on low heat (adjust heat as needed.)


Stir eggs as needed to keep from sticking and burning. They will cook like scrambled eggs so they need to be watched.


When they are the consistency you like, remove from heat and serve. Be sure not to cook too long as overcooking will cause the eggs to become dry.
