Lentil Soup on a Cold Day

I love this lentil soup. It's easy to make, super healthy, packed full of nutrients and so satisfying! During the cold months, this soup is made often in my house and I never get tired of it. It's like healthy comfort food!


I followed the recipe exact, except I add my spinach each time I make a bowl instead of all at once. I usually have leftovers and I find that if it sits in the soup while in the fridge it tends to get soggy, so as I heat a bowl on the stove I'll add a healthy handful and cook until just soft then serve. If you won't have any leftovers after the the first day then it's ok to add all the spinach, but if I have leftovers, that's what I do. I also tend to double this soup and end up using a whole bag of spinach by the time the soup is gone, but you do what works for you. This soup definitely gets a thumbs up! Happy cooking!
